My Italian Dressed Chicken is at the top of that list, but this Cilantro Lime Chicken is a bright and refreshing twist on a classic.
I love simple recipes, but I don’t want to compromise on taste. If a recipe only has two ingredients, it needs to be good enough that the whole family can order it quickly. This cilantro lime chicken is a hit every time.
Marinate 4 chicken breasts in cilantro-lime salad dressing for about 15 minutes. Then, baking in the oven caramelizes the dressing and locks in the citrus flavor. The dressing at the bottom of the pan mixes with the juices from the chicken to create a creamy, tangy sauce that you drizzle over the chicken before serving.

I love making this recipe using boneless, skinless chicken breasts. This is because it cooks quickly and there is no need to dispose of the bones. However, sometimes it is made with drumsticks or bone-in thighs. Chicken is fully cooked at 165°F, but dark meats such as drumsticks and thighs need to reach at least 175°F to be most tender. For safety and best results, always check the internal temperature of the chicken using an instant-read thermometer.

My favorite way to eat this chicken is in a taco bowl.
